The Pinot Noir

The Pinot Black is harvested “égrappé” by hand then and is was able to in steeping during 6 to 8 days with 2 to 3 daily rewinding in order to extract has maximum of color. The alcoholic fermentation takes place during the steeping. Wine will do the fermentation malolactique: it permits to get flexible and fruity wines. It is extracted then starts its maturation in thunderbolts of oak until the setting in bottles.
She is made in the spring (mid April) on automatic sterile material (in benefit of services) and has place exclusively to the property. At the end of the setting in bottles, wines will be able to continue their maturation until fall; date to which they will be proposed to the sale.                                                                                      Return
